Pistachio White Chocolate Cookies

Disclaimer: There is half a packet of instant pistachio pudding mix in this. I feel the need to share this because I really do pride myself in organic and high quality ingredients, when possible. But in life, there are exceptions. And this is one of those exceptions.

A few weeks back, a colleague at work made me promise that I would make her pistachio cake. The cake required my purchasing a box of instant pistachio pudding mix. In an effort to fulfill my promise, there is a box of instant pudding mix waiting in my pantry. The only problem though, I got a little sidetracked.

I found a recipe for pistachio white chocolate chip cookies. Oops. Damn you, Pinterest.

They too require a little of the artificial stuff. And so without further ado, let me introduce you to these wonderful pistachio cookies, complete with boxed pistachio pudding mix, white chocolate chips, and of course, organic chopped pistachio. 😉 What can I say? In the wise words of Julia Child, “Everything in moderation. Including moderation.”

These cookies are super soft, maybe because they are only baked for 8 minutes, but probably because of the pudding mix. They are more sweet than not, so pick your audience accordingly. Or omit the white chocolate chips. But honestly, I love super-sweet and I love understated sweet, and my final word is that they are delicious.

P.s. They’d be awesome to make for St. Patrick’s Day, Christmas, Easter, or any other green holiday.
