Peach & Bourbon Pecan Crumble

When you want life to be peachy, let this peach and bourbon pecan crumble in.

My friend, Rosa, has a peach tree and couldn’t keep up with their production this year so I scored big time–6 pounds worth! Talk about a good friend.

The smell of a fresh summer peach can only be beat by it’s taste. And this crumble is exceptional.

Ripe peaches warmed with hints of cinnamon and nutmeg and topped with a pecan crumble that’s been spiked with bourbon. The peaches provide both sweetness and tartness, marrying perfectly with the topping. There’s only 1/2 cup of sugar tossed with 4 pounds of fruit, which is a pretty decent ratio. And it’s all brought together by the pecan which is subtle here for being a whole cup’s worth but inexplicably good. Nutty, with a depth of flavor thanks to their being toasted, and again, delicious with peach.

I, of course, always top any warm fruit dessert with a scoop of vanilla ice cream. And I think you should too. 🙂

If you are hoping to make this for a smaller crowd, simply divide the recipe in half and bake it in a smaller dish. Another note, vanilla can be replaced with the bourbon if that sounds more appealing to you. Enjoy!
