I made these yesterday. The fact that it’s on A Bee Bakes today is a sign of just how amazing these raspberry cream cheese pinwheels are.
I bought a Costco sized container of raspberries that were deep red and so tempting in the store. And when I got home to admire them, I swear the drive home alone aged them because they were already growing fuzzy. So I had to brainstorm quickly! I ate a few fresh with breakfast, another few in cottage cheese for lunch, and then realized I needed to bake these, stat!
And so, it came down to two options:
- A puff pastry based tart with a vanilla bean pastry cream and topped with fresh raspberries and then a raspberry coulis drizzle.
- These raspberry cream cheese pinwheels pastries that are simply beautiful and reminiscent of a breakfast danish.
Option 2 was chosen by my husband under the grounds that the first option seemed too ordinary. (I’ll still make that one soon though.)
Anyways, I got to making these and less than 30 minutes later, Fabien and I were eating them. He couldn’t believe it. I couldn’t either!
When working with puff pastry (I don’t make my own), I always forget that you’re basically just assembling. All my recipes that call for puff pastry are actually some of the quickest and easiest on A Bee Bakes. They also happen to be some of the most beautiful.
