I made these yesterday. The fact that it’s on A Bee Bakes today is a sign of just how amazing these raspberry cream cheese pinwheels are.
I bought a Costco sized container of raspberries that were deep red and so tempting in the store. And when I got home to admire them, I swear the drive home alone aged them because they were already growing fuzzy. So I had to brainstorm quickly! I ate a few fresh with breakfast, another few in cottage cheese for lunch, and then realized I needed to bake these, stat!
And so, it came down to two options:
- A puff pastry based tart with a vanilla bean pastry cream and topped with fresh raspberries and then a raspberry coulis drizzle.
- These raspberry cream cheese pinwheels pastries that are simply beautiful and reminiscent of a breakfast danish.
Option 2 was chosen by my husband under the grounds that the first option seemed too ordinary. (I’ll still make that one soon though.)
Anyways, I got to making these and less than 30 minutes later, Fabien and I were eating them. He couldn’t believe it. I couldn’t either!
When working with puff pastry (I don’t make my own), I always forget that you’re basically just assembling. All my recipes that call for puff pastry are actually some of the quickest and easiest on A Bee Bakes. They also happen to be some of the most beautiful.
There are tons more. Just search “puff pastry” in the search engine on my blog. And if the reason you’re reading this is because you have raspberries to use up, consider these recipes as well Old Fashioned Raspberry Cobbler, Vanilla Panna Cotta with Raspberry Coulis, and Speculoos & Raspberry Tiramisu. If you don’t follow me on Instagram, @abeebakes, please do because I will make a video soon on how to make these since it’s so much easier to see where to make the cuts, how to fold them into their proper shapes, etc.
