These banana nut muffins taste exactly like my youth. You know the ones? Usually at a coffee shop that are perfectly sweet, so soft with an almost sticky top, with walnut piece sprinkled throughout? My Dad never turns down a banana nut muffin or slice and I’ve learned to do the same. It all started when I was in pre-school. On the days we were running particularly behind in the morning, my parents would sometimes stop at the local coffee shop before dropping my brother and me off. These were my favorite mornings. I can still remember the smell of my Mom’s coffee and my Dad balancing his banana nut muffin on his lap while he drove. I would be in the backseat with my brother enjoying either a bear-claw or banana nut muffin. And I’ve loved them ever since.
This is a recipe I’ve adapted from Martha Stewart’s banana bread loaf. So you know it has to be good! It’s easy, full of banana flavor, and it just the right texture I remember loving as a kid. These particularly hit the spot in the morning with a cup of coffee.
