This pizza was developed when I had leftover ingredients from my Baked Feta & Olives.
One of my best friend’s Shireen, was coming over for dinner to celebrate her birthday. For me birthday, she’d given me a little book on pizza that she’d brought back from her trip to Italy. So what better way than to celebrate with pizza? I made my crowd-pleasing favorite, Goat Cheese & Honey Pizza and decided to use up those extra olives and feta in this pizza.
I thought about what comes on a Greek salad and then just put those ingredients over pizza dough instead. Green olives, Kalamata olives, red onion, and feta are the prominent flavors. The rest is just my basic pizza favorites, oregano, basil, mozzarella, and tomato sauce. And then of course, the golden touch, a drizzle of olive oil over the whole thing before serving.
It was a hit!
