It always blows my mind to see how drastically one ingredient can improve a classic chocolate chip cookie. I’m a huge fan of toffee and I love adding it to cookies, like Toffee Espresso Chocolate Chunk Cookies and Oatmeal Toffee Cookies. But honestly, who am I kidding? I love adding it to anything: Apple Toffee Bars, and Sticky Toffee Pudding. It adds a welcome crunchy texture and a specific caramelized sweet component. If you’re a soft cookie lover, you’ll love these.
The recipe, even without the addition of toffee, is already a keeper. It’s a classic soft chocolate chip cookie, that bends rather than breaks, when split in half. It doesn’t require chilling the dough so when the craving hits, you can satisfy it quickly. They literally melt in your mouth. Enjoy!
