Broccoli Frittata

This recipe is from when I was in college. It was one of about five things I cooked that constituted as real food during that time. I made it for three main reasons.

  1. It’s easy to prepare.
  2. It’s brain food (broccoli & eggs)
  3. It tastes good.

I ate this mostly for dinner even though it’s absolutely perfect for breakfast and brunch. It’s protein packed and very wholesome. I even occasionally add a handful of chopped greens to the mix or a diced red pepper but honestly the broccoli on it’s own really shines here. The original recipe was created by a Mom who said that her kids love it and call it breakfast pizza. While I think that’s a stretch (I mean, it’s healthy after-all), at least we have the kids approval too.

Feel free to mix up the veggies or add more. Also, if you don’t have parmesan, no problem. Try cheddar since that’s usually paired with broccoli. Or any other sharp cheese. Also, taste as you go with the salt and pepper and season to your liking.
