Banana Oatmeal Pancakes

Pancakes have been my number one favorite breakfast item since the first time I ate them. Age and a more sophisticated palate has not changed this fact. I have however, incorporated some variety into my pancake diet. Expanding beyond the delicious Chocolate Chip Pancakes to gluten free Coconut Flour Pancakes (GF) and Pumpkin Pancakes and now, these delicious chewy Banana Oatmeal pancakes (that I occasionally make as breakfast-for-dinner).

The ingredients are simple and whole. They can be mixed together in one bowl with just a fork. They are hearty and delicious and definitely create competition with your classic Vanilla Buttermilk Pancakes. A smear of Nutella or peanut butter, a drizzle of maple syrup or honey, and served with fresh fruit and yogurt, the “topping” options are endless.

Make sure you like banana though because that’s the prominent flavor. Enjoy!
