I love a spicy cookie. The more ginger, cinnamon and molasses, the better. The contrast between the crisp edges and the chewy soft center make these irresistible.
My first official baking job was this past summer for an event at NASA. I baked 300 cookies. I chose three of my favorite cookie recipes and baked 100 of each. This recipe was the one I chose for the “spice cookie” category.
