Dark Chocolate Chip Cookies

I’m too embarrassed to say where I found this recipe. But I will anyway.

The Bachelorette. Becca Kufrin to be exact. I watched her season of the popular reality dating show and I follow her on Instagram. Recently, she posted a picture of 12 plump dark chocolate chip cookies with the caption, “After 10 minutes of exciting labor, Mom and 12 new babies are doing well.” Then she posted the recipe.

I couldn’t help my intrigue: Dark chocolate chips.

I’ve baked so many chocolate chip cookies at this point, that I couldn’t help but wonder how hers compare. In reading through the recipe, I realized that it was pretty traditional in terms of having both brown sugar and regular sugar, vanilla, and a stick of butter. I did notice the sugar quantities were slightly less. Again, intriguing. Her recipe also calls for cornstarch, a great way to soften any cookie dough. That’s when my intrigue blossomed into full blown motivation to bake. So I made them!

And I loved them. They are incredibly soft cookies, in large part because of the cornstarch and short baking time. I liked how they weren’t “sugar forward”. I also liked the dark chocolate chips, which added a more modern touch. Her recipe excluded salt, which is just unacceptable to me, so I added started with 1/8 tsp. and next time will take it up to 1/4 tsp. The salt really rounds out the flavors of the cookie and matches perfectly with the dark chocolate chips.

And the best part? It makes a perfect 12, which is very reasonable for a week ahead, wouldn’t you say?
