Apple Peanut Butter Cookies

One of my favorite snacks of all time is a crisp apple, peeled and narrowly sliced, accompanied by smooth peanut butter. God forbid the apple pieces have bits of core with it or even worse, if the peanut butter is chunky. 😉

As a kid, each Fall, I’d help my parents pick the green apples from the tree in the front yard. Our golden retriever would stand by in case any fell before we could get to them. Typically the apples would be used in a chunky apple cake that my Mom loved to make. Each time the cake would be a little different, depending on the quality of the apples that year. Sometimes they were more starchy, sometimes more sweet, other years more tart. One year they were so good, they all had to peeled, narrowly sliced, and served fresh with peanut butter. Again, smooth peanut butter that is. 😉

If the flavor combination is so delicious, wouldn’t that ring true if baked together? The answer, YES. They may not look like much, but they are bursting with flavor and the texture is so chewy and delicious. They’re moist, thick, creamy, they’re making me salivate, just thinking of them. The chunks of apple are fresh and perfectly cooked (aka not mush), and the peanut butter is not overpowering. It’s just an amazing cookie.

It may look as though oats are inside, I can assure you, there are not. However…that would not be a bad idea….Happy baking!
