I can’t even describe how delicious these are.
The word wonton may make you think that they have an asian flavor, however the only asian aspect about these are the wonton wrappers. Think of them more as butternut squash ravioli. With a noodle quality instead of a pasta quality.
As for the flavor: OMG. So good. The squash is heightened with the addition of creamy ricotta and salty Parmesan. The addition of fresh herbs and garlic, create the perfect vegetarian dinner for the autumn season.
You can add any sauce and I’ve included a simple pesto recipe here. However, I think this would be amazing served with a browned butter sauce with crushed hazelnuts and chopped sage. Or maybe serve these on a bed of sautéed kale and a sprinkling of parmesan.
