My favorite muffins are blueberry muffins. They’re so hard to get wrong. I haven’t posted my classic blueberry muffin recipe here yet, but with blueberry season upon us, that one will be coming soon. It incorporates buttermilk for an extra moist crumb.
These particular muffins are anything but ordinary. They’re more of a dessert muffin because they have a hidden cream cheese layer throughout, and a wonderful tang from the lemon juice and zest that are incorporated into the batter. They can be baked into a cake too and I’ve included the different baking times below. Enjoy!
