Peanut Butter Sandwich Cookies

If you like peanut butter, you’ll like these.

If you like nutter butter’s, you’ll like these.

If you like the Girl Gcout peanut butter cookie “do-si-do’s”, you’ll like these.

Even Fabien, who doesn’t like peanut butter, somehow was able to help polish these off. The peanut butter poll I had on @abeebakes Instagram asked who does and does not like peanut butter. The result: 70% like it, 30% do not. That seems about right. Well, 70%, listen up:

The actual cookies are soft, crispy along the edges, chewy all over, and and their depth of flavor is glorified by the hearty oats and the two types of sugar used. They really do taste like the girl scout cookies, but bigger, softer, and dare I say, better. The filling is creamy and not too sweet. Nothing like a Reese’s filling, it’s more like a hint of sweetness added to your typical peanut butter spread. And because of that, they’re perfect.

I made 12 cookie sandwiches with the recipe below, but you can easily double this but making smaller cookies, which I recommend since they are quite decadent.
