Banana bread is one of my favorite things. It is so easy to make and comforting to eat. And it can be altered to satisfy various food restrictions. This particular recipe is gluten free, and uses no refined sugar or butter. It is still as moist as all banana bread should be! I use walnuts in this but of course you are welcome to use pecans, almond, or omit the nuts entirely. The riper the bananas you use, the better since there is no refined sugar in the recipe, and much of the sweetness will come from the banana. Enjoy this healthier take on a classic.
