Banana bread is a theme on my blog. We always keep bananas in the house, and naturally, the ones not eaten get speckled and brown. I love when fruits queue me to bake. It’s my duty to never waste food, and so, I constantly bake with bananas.
This one is the perfect loaf to bring for a crowd because it caters to a variety of restricted diets. It’s Paleo, gluten-free, coconut free, no added sugar, and is made with dairy/soy free chocolate chips. There are eggs in it though, so it is not vegan.
If you do not have diet restrictions, feel free to use regular chocolate chips. If you like your desserts on the sweeter side, add up to 3 tbsp. into the batter. The ripe bananas should do their job in sweetening this naturally, but I like my desserts are the less sweet side.
I use blanched almond flour for this loaf. Almond meal can be used as well but its more prone to crumbling and doesn’t slice as cleanly.
