Honey & Pumpkin Spice Cookies

These are the ultimate soft cookie. They do not have any pumpkin in them but they are bursting with flavor due to 2 entire tablespoons of pumpkin pie spice. They are sweetened with honey and brown sugar. They will go way too fast so maybe double the batch!
