Peanut Butter Cake

I’ve been waiting a long time to make this cake. The people who help me eat most of my bakes are my Mom and my husband. My Mom doesn’t like peanut butter desserts (gasp, I know) and my husband is French, so by principle doesn’t like peanut butter (le sigh). *The majority of the French (with an exception of two of my girlfriends) don’t like it and would much rather enjoy hazelnut spreads, like Nutella. So anyways, I was apprehensive to make a 9×13-inch peanut butter cake without troops of support to help me finish it.

The opportunity came when my Mom’s friend Sharon came to visit. Thank you, fellow peanut butter lover! It was then an official go when my Mom hosted a dinner that required dessert for Sharon and her other close friend, Tari. Both readers here. Hi! ❤

And so, at long last, with the support required, I made this cake. Funny story. My Mom “managed” to eat an entire slice. I’ll also mention she happens to be on a diet. So that’s how good this cake is. It’ll make peanut butter haters come around and it’s so tempting that people on diets will make an exception. Tari, her husband, and Sharon did their parts as well. And guess who else came around? Fabien! I couldn’t believe it. He did scrap the peanut butter frosting off while he polished off his second slice (a classic Fabien move to enable him to eat more without getting too full), but my Mom came along and finished that up for him. Sorry guys, “free game” here on A Bee Bakes. 😉 A note from Fabien: “it’s just as good without the frosting.” He’s right!

Anyways, imagine the most moist cake you can. Spongy. Melt in your mouth. Soft. And that’s the base of this cake. It’s not overpowering at all in peanut butter even though there’s a ton of it in it. Peanut butter is also used in the whipped frosting. It’s basically a fluffy peanut butter buttercream. And it’s insanely good. Together, they make a beautiful cake. It is, by far, my favorite peanut butter dessert I’ve ever made. Yes, even more than Flutternutter (Peanut Butter Marshmallow) Cookies. Just one more thing, don’t make this cake unless you have people to help you eat it. Trust me. Your waste-line will thank you.
