Mushroom Puff Pastry Swirls

Looking for the next great addition to your brunch table? Or perhaps the best appetizer at a future dinner or function? I guarantee these will be a hit. Even the little flakes of puff pastry left behind, will in fact, not be left behind. They’re a great vegetarian option.

These swirls are surprisingly easy to prepare, so don’t be scared off by their sophisticated appearance. A sheet of puff pastry is spread with mushrooms that have been sautéed with onion and seasonings and then sprinkled with cheese. You roll it all up, cut into slices, and bake!

The result? A perfect, surprisingly light, finger food. The recipe below has just the right ratio of ingredients. Whenever cheese is involved, I tend to exaggerate. And so, when first baking these, I went overboard and put an extra handful of cheese over the mushrooms. While it tasted delicious, the excess cheese bubbled out and masked the beautiful swirl. So stick to the recipe so you can still enjoy the swirl.
