Salted Dark Chocolate & Almond Cookies

These are special little cookies, with a secret ingredient. Instead of using only butter, they use a combination of butter and *drumroll please*….coconut oil! This combination makes for a thick cookie with a soft and chewy texture.

If you love chocolate covered almonds, you will love these cookies. If you love chocolate chip cookies, you will love these cookies. If you love the dessert trend that incorporates a sprinkling of sea salt for finish, you will love these cookies.

To be honest, it took me a while to accept, and finally jump on board, with salted desserts. I love sweet. I love salty. But for a while, I couldn’t eat a chocolate mousse, piece of caramel, or even chocolate without finding it covered with flakey sea salt.

These cookies have changed all that. And if you make them, you can control the amount of salt that gets sprinkled on top. The first time I made them, I omitted the extra sprinkling on top. And while good, they were missing something. And that something was the optional sea salt on top, that I left out. Oops. Well, I gave them a second chance, this time, adding a controlled pinch of salt as a finish. And finish them I did. They were absolutely delicious. They went from an ordinary cookie to an extraordinary cookie.
