Tropical Carrot Cake 🥕🍍🥥🌴
Over the weekend I found myself with a craving for carrot cake (not out of the usual) and a refrigerator full of carrots. The predicament? It’s mid-June and I’m pretty fussy about enjoying seasonal desserts in their proper season. My solution was to develop a recipe that adds the bright flavors of summer to this otherwise autumn cake. Consider it a summer makeover. 😎 Pineapple juice, coconut, lime juice, and macadamia nuts all work together to “summer-fy” this recipe. And what makes a carrot cake a carrot cake is all still there too — carrots (duh), cinnamon, nutmeg, and cream cheese frosting. Enjoy! 🥕
