Fresh Apple Cake

This very cake represents the transition from summer to Fall for me. My Mom’s house has a green apple tree in the front yard and each September it produces the apples that we use for this very cake. Every time I eat it, it tastes like home!

This year though, at the end of summer, my husband and I moved to Austin. So our first month was spent exploring and unpacking rather than baking apple cakes. But now we’re settled. We’ve moved into our place, and (most importantly) our kitchen is entirely unpacked. The only thing left on the list was to make this cake. πŸ˜‰

And so yes, the end of November was a bit later than usual but it transported me right back for Northern California.

This Fresh Apple Cake or what I refer to as Mom’s apple cake, is soft, dense with fresh apples and nuts, and absolutely delicious. It doesn’t call for brown sugar yet it tastes very much like that to me. It also has Fall spices like cinnamon and nutmeg to really get the message across that summer is ending and it’s Fall’s turn. While the cake is soft and beyond moist, the top and edges create a very soft lid that sort of cracks when cut into. It’s amazing.
