Baked Glazed Salmon

I come from a very big family. I’m the youngest sibling of six! I have two brothers and my Dad in Texas. A brother, sister, and my Mom in the Bay Area. And another sister in Southern California. Add all their children and extended family, and you’re left with quite the crowd. It’s rare now that we’re all together but we try to get together as often as we can.

Recently, the Bay Area bunch all met at my brother’s new home just North of San Francisco for dinner. While I was catching up on my niece’s high school experience, and eating my weight in brie, the rest of my family was preparing this easiest-can-be salmon recipe. It was a hit!

My Mom chose the recipe because it sounded so delicious (it is) and it requires very little preparation. Just whisk a little sauce together, brush it over the salmon, and pop it in the oven to bake. When you pull it out, you’re met with an incredibly juicy and flakey baked fish that channels Asian flavors like the soy sauce and garlic. It’s sweet so I of course approve and the tang from the lemon balances it all out.

If you’re looking for your next salmon dish, look no further. You will not be disappointed!

Also, just so you know, I literally never cook with protein. I’m loosely vegetarian and can never time meat correctly and have no clue how to prepare any of it. However, with my Mom’s guidance on this recipe, I was able to make it because it was so easy and straightforward. Bake for 20 minutes, broil for 3 and voila. No doubting the doneness or checking the temperature on the inside. It’s one of those dishes you make and think, how did I make this?! It’s so good!

Oh, and one last thing. I made this for dessert: Olive Oil Cake
