When I was growing up, my brother, Scott, and I walked across the street to hang out with our best neighborhood friends, Megan and Mitch. Their Mom, Elke, was notorious for making the world’s greatest pancakes. In later years, I learned it’s because she used the Bisquick boxed mix. To this day I still love them. Golden, fluffy, and delicious.
As an adult, a handful of years ago, I was invited over to watch the Oscars with their family and to my delight, they served pancakes for the viewing party (in my honor). I told you they were the best neighbors! Many weekend memories as a kid involved walking over to their house, knocking on the front door and sitting down for pancake breakfast with them. š
Another beloved childhood memory, was eating the one pancake recipe I approved of in my house. My Mom always made pancakes from scratch and I didn’t like them. (They didn’t taste like Bisquick). They were darker than Elke’s golden ones (I’m sure whole wheat was snuck in) and they never tasted quite right. However, there was one pancake recipe that I did approve of. Mom & Scotty’s pancakes. To the rest of the world, Oatmeal Buttermilk pancakes. They got their name because my brother was always by my Mom’s side making them. They’re out of this world good.
They have:
- a slight (and welcome) tang from the buttermilk
- a good chew with the rolled oats
- a depth of flavor from the addition of oatbran
A common sight to see back then was my brother and I walking in to pre-school or elementary school with a napkin wrapped around a Mom & Scotty pancake.Ā They’re delicious warm or cold, with or without syrup, with or without butter. And they’re wholesome.
And so, as an adult, the Bisquick box has been replaced with a carton of buttermilk, rolled oats, and oatbran. Staples in my kitchen. I think you and your family will love them too.
P.s. They’re so good in fact, my brother, who doesn’t typically even eat breakfast because he believes any other meal is superior to the options at breakfast, obviously adores these. So that’s saying something. š
