Oatmeal Toffee Cookies

These cookies deserve a better photoshoot than the above photo but the problem with them is that they do not last long enough to be photographed. This was the last cookie of the batch, and even if alone, it needed to be captured because this recipe is delicious.

You know you have a good cookie recipe when you cannot stop yourself at just one. I pawned many off to my friends but still had leftovers, which naturally I had to consume in one sitting, to really get them out of the house.

They are sweet, from the toffee bits, and chewy from the oatmeal and buttery all around. They are quick to throw together, as there is no chilling time required. They could potentially be even more delicious (wait, is that even possible actually?) with the addition of coconut, which I’ve added as optional in the recipe.
