Pistachio & Almond Cake

Are you a fan of nuts? This cake is as nutty as it gets. It reminds me of a Middle Eastern or Indian dessert.

The almonds and pistachio add so much crunch and texture. It’s almost amazing how when you slice through the loaf, it doesn’t just crumble into a pile of nuts. It’s tender and moist, without being oily and heavy. And it’s not just a texture thing. The flavor is heightened as well. If you’re feeling up for it, you can even add a bit of orange or lemon zest to the mixture to downplay the richness. However, I welcomed the richness 😉

It’s more nutty than sweet so it’s completely acceptable to eat for breakfast or to use as a snacking cake rather than a dessert. I imagine it’d also be a nice loaf to serve along with a platter of fresh fruit or with cheese.
