I’m back from France! Thanks for being patient for new recipes. And also for following along on @abeebakes Instagram.
Before I left, I had a craving for pumpkin and decided to bake these. They’ve been on my blog for a long time, but they needed a photo update. So here they are again. 🙂 They are delicious, light, and fluffy. Because there is no butter, they don’t weigh you down and instead have a very sponge cake-y texture.
Not only are they so easy to make, requiring no electric mixer and just a whisk, they are also easy to adapt to your tastes. You can play with different chocolate chips, add nuts, combine your favorite spices, the options are endless.
Next time you have a half a can of pumpkin to use up, think of these.
