Lemon Crinkle Cookies

A common theme on my blog is my not-so-secret past of being the world’s pickiest eater. I remember if I didn’t like anything as a kid, I would announce that I was allergic to whatever it is I didn’t want to eat. I had many “allergies”….

Dates.

Tomatoes.

Sauce. Of any kind, with the exception of chocolate.

Ketchup.

Mint.

And of course, lemons.

This included lemonade. My poor parents.

While I was of course not allergic to anything, I applied my “allergy excuse” at any birthday party that served lemon cake. As discussed in the Tarte au Citron recipe, it wasn’t until very recently that I crossed a bridge and not only accept lemon desserts into my life, but, as my kid-self would say, “I love them so much I want to marry them.”

Add these perfect pillow-y lemon cookies to the list of dessert matrimony. These have the perfect amount of lemon, are not in-your-face sweet, and are so soft that they melt in your mouth.

Update: No longer allergic to lemon 😉
