Coconut Banana Bread (Gluten Free, Paleo, GAPS)

Gluten Free, Paleo, GAPS, no butter, no refined sugar…You begin to wonder what is actually in it. Turns out, a lot of natural ingredients that work so well together to create this ultra moist coconut rich banana bread.

Coconut comes in three forms here: 1) Coconut Oil (helping with the moisture). 2) Coconut flour (helping with the flavor and creating a GF bread). 3) Shredded coconut for a nice chew on top. It’s delicious and pairs perfectly with the sweet banana and honey combination.

Bring this to your next potluck and all the GF eaters will so happy. You too will be happy because this is so simple to make: One bowl and no electric mixer. Sold.

Oh, and one last note. Yours will likely be lighter in color than the one pictured above. To reduce the sweetness, I used coconut nectar with the honey. This is darker in color, and created a darker loaf. If using just honey or honey and agave, your loaf will be a nice light blonde bread color.
