I went into this bake, content to use up the jar of applesauce in my refrigerator. I was not expecting to be blown away by what exited my oven, 40 minutes later. This cake is an absolute hit. The variety of spices pair perfectly with the apple. And it’s smothered in a cinnamon spiced cream cheese frosting. I knew the minute I tasted it that it would not last long enough to share with colleagues or neighbors. I was right! The best part about this recipe is that is is so intensely moist. Add nuts if you wish. Or create cupcakes. Or perhaps just make the cake and ditch the frosting. But honestly, who ditches cream cheese frosting?
