Pancakes have been my number one favorite breakfast item since the first time I ate them. Age and a more sophisticated palate has not changed this fact. I have however, incorporated some variety into my pancake diet. Expanding beyond the delicious, Vanilla Buttermilk Pancakes to Coconut Flour Pancakes (GF), and these delicious chewy Banana Oatmeal pancakes (that I occasionally make as breakfast-for-dinner). The ingredients are simple and whole. They can be mixed together in one bowl with just a fork. They are hearty and delicious and definitely create competition with your classic pancake recipe. A smear of Nutella or peanut butter, a drizzle of maple syrup or honey, and served with fresh fruit and yogurt, the “topping” options are endless.
