Cheesecake Bites

 

If you’re a cheesecake fan, but you’re not a baker, then I’m very happy you’ve arrived here. These no-bake cheesecake bites, are the closest you can get to delicious cheesecake without having to turn on the oven and without having to buy a springform pan.

The crust is delicious. Salty, buttery, and graham-cracker forward. And the filling is not too sweet, nicely tangy, and perfectly smooth. The little bites are delicious plain, but the flavor is heightened when topped with fresh sliced fruit, a drizzle of chocolate or caramel sauce, or a nice spread of fruit curd.

It’s funny, I’ve never liked chocolate with my cheesecake. In fact, I’ve never liked anything with my cheesecake. Just pure plain cheesecake. It’s too delicious in my opinion to be messed with. With that said though, I’m not sure if it’s because these are not baked so don’t get that super developed flavor, or if it’s because they are lighter on sugar, or perhaps because there is no egg. All that to say, a little something extra is better here. But again, personal preference.

  1. Oh, that’s a great post! The closeup after the recipe is very dramatic . And I liked what you said about summer and not wanting to turn on the oven…good idea.
