Blackberry Cheesecake Galette

If you love cheesecake, you will love this galette. I guarantee it. A galette is a term in French to describe a flat cake with a flakey pastry. It’s usually open in the middle, exposing whatever it is you’ve filled the pastry with and can be sweet or savory. They’re so good. And incredibly easy for such a sophisticated looking food.

As a teenager, I would drive to Healdsburg, CA with my mom and we’d go to the Healdsburg Bakery to buy their amazing galette dough. I grew up eating savory galettes filled with celery and summer vegetables. I think it’s partly responsible for my love of vegetables! Turns out, it’s super easy to make yourself and just as good.

Your options are endless. From filling the dough with fresh vegetables and cheese, or with seasonal fruit mixed with sugar and butter, or in this case, cheesecake filling with fresh summer blackberries. It’s so freakin’ good.

*A note I’ve learned along the way, when rolling out the dough, make sure it’s large enough so that one-inch can hang over the pan. This helps prevent the dough from being too think which can make it gummy. Also, any citrus zest and juice can be used here. I love using orange and lemon is classic and delicious.
