These little pancakes are a miracle if you’re gluten intolerant or if you’re trying to maintain a low-carb diet. OR if you’re like me, and have a gigantic bag of coconut flour that you’re trying to use up. This is the perfect recipe for my efforts. These pancakes are so coconut-y and pancake-y. I can’t believe this isn’t a bigger trend for brunch. They only have a few simple ingredients and they’re ready in mere minutes. Try! You’ll be amazed.
